Rainy Season Brings Pleasure and Happiness with the Drops Falling from Heaven.
The monsoon is heartily welcomed by everyone, as the season brings relief from summer months. The climate is cold and the tongue needs some hot and spicy. If anything truly defines the flavour of Indian monsoons, it is this bhutta.

The bhutta (Corn) season is officially on. We would grill a corn on the cob apply ghee, salt and lemon juice and eat. Its tangy salty charred taste was satiating and thoroughly enjoyable in the rainy season. Though corn is a summer crop, it is mostly relished in rains.

And come to think of it, it is perfect for the season too. It’s definitely a far better bet than the fried samosas and bhajias that we tend to veer towards when it rains, plus, you’ll be surprised to know just how nutrient-packed it really is.

Corn is rich in pantothenic acid, thiamine and niacin. A good source of folic acid, vitamin C and beta-carotene, it also contains phosphorous, magnesium, zinc and iron copper and selenium in traces.

All these nutrients, help prevent heart disease. It increases your mental ability and boosts your memory, as it contains thiamine. Consuming corn also helps lower cholesterol and prevents colon cancer. You can add corn to your diet. This tiny food is loaded with lutein and zeaxanthin, two phytochemicals, which helps improve eye health. A cob of corn has about the same number of calories as an apple and less than one-fourth the sugar. In other words, it can be one of the healthier foods. Apart from these benefits, your favourite monsoon snack Corn is a great source of fibre that aids in digestion. Add a cup of yellow corn to your diet, to fill your body with 3.6 grams of dietary fibre. This fibre will help control your hunger and aid in weight loss.

Quick Ideas To Serve: Besides corn on the cob that can be relished roasted or steamed, try corn bhel, grilled corn sandwiches, corn patties, corn samosas and baked corn too.

Feeling adventurous? Whip up corn biryani, corn frankies and corn spring roles. Or maybe you can have a homemade pizza today with lots of corn sprinkled on top.
Too lazy? Just toss steamed corn kernels in an olive oil-salt-pepper-herbs dressing and bite in as you watch rain go pitter patter on the window shields.

10 ESSENTIAL SPICES FOR COOKING

Posted on Monday, 10 April 2017

One of the key things that people find frightening cooking food is use of spices in massive amount.

Here I have showcase 10 spices that are mainly used in cooking.

Some spices can be blended and few are dry roasted to release their oil before being mixed into spice. I would recommend using blender or grinder to ground the mixes purely. Take use of this especially when cassia bark needs to be blend as it is very hard.

Cardamom
Two types of cardamom are used Green and Black. The more common variety is green because it is used from spice to desserts. The taste is light and sweet. When you are making garam masala you can blend it as whole.

zeemlo_blog_twoOn the other hand black cardamom is used with lot of restraint as it is smoky and powerful. Its seeds are used and if you use it as whole make sure before serving the dish it is pulled out.

Cassia Bark

zeemlo_blog_thrYes, it’s an interesting spice also called “Chinese Cinnamon”. Cassia is cheaper to crop and majority of cinnamon is made from cassia bark. Flavor is milder and can use in larger quantity. To check its freshness rub it on your hand if it smells cinnamon fragrance then bark is fresh and real.

Coriander

zeemlo_blog_fourIs one of the oldest spices and is recognized by its golden yellowish color. Seeds of coriander are aromatic. In cuisines ground coriander is used mainly.

Clove

zeemlo_blog_one

Clove is common spice that is used in many of dishes. It comes from essential oils and is medicinal or strong flavor. It can be used whole or blended into mixture of spices. No need of any caution while cooking food with clove mixture and it overpowers more mild spices.

Cumin

zeemlo_blog_fiveCumin is usually used as whole or spice mixes. You can identify it by its fragrance or ribbed brown seeds. Keep the thing in mind while roasting it is it burn easily and burnt cumin tastes bitter. Toast it until your nose whiff of fragrance.

Black Pepper

zeemlo_blog_sixBlack Peeper is found in Western Ghats or Malabar regions. Black Pepper is hardest spice to grow due to the reason of its natural cycle. And its price varies a lot. Before blending it is toasted and it can ground openly to the dishes for freshness of flavor.

Nutmeg and Mace

zeemlo_blog_sevenThese both are one of my favorite and is used in maximum foods while cooking. Mace is outer covering of nutmeg and has darker red color. It turns in orange when it is dried. Before blending nutmeg do not need to be toasted.

Mustard Seeds

zeemlo_blog_nineIt can black, yellow or brown. When mustard is cooked into oil its flavor is released. You can use them in curries and mainly it used by North Indians.

Fenugreek

zeemlo_blog_eight
Fenugreek is yellowish in color and is tiny wheat kernels and used as spice. It should be used with cautions as they are strongly fragrances. You can use them in any dishes and basically used in medicines.

Turmeric

zeemlo_blog_tenTurmeric is named spice in India. It can be used as fresh or dried like ginger. Can use in curries and mixture of spices. The flavor of fresh turmeric is slightly harder than dried.
